1 cup chopped red OR yellow peppers
1 cup chopped tomatoes
2 41/2 oz chopped green chillies undrained
12 ozs. (3 cups) shredded colby monterey jackcheese blend
16 6inch flour torillas
1/2 cup salsa
1/2 sour cream
to keep tortellias warm while cooking others place in warm oven cookie sheet
in small bowl combine bell peppers tomatoes and chillies mix well. spoon about 1/3 pepper mix and heaping 1/3 cup cheese into each of 8 tortillias. spray non stick skillit with Pam. heat over medium heat until hot. add quesadillas 2 at a time cook 1 t 2 min until cheese melts and tortillas are toasted. cut into wedges and serve with sour cream and aa
