Carrot Bread

1 cup shredded carrots
1 cup sugar
3/4 cup cooking oil
2 eggs
1 1/2 cups flour
1 t. baking soda
1 t. cinnamon
1/2 t. salt
1/2 cup raisins
1/4 cup nuts
Blend carrots, sugar, oil and eggs.
Beat 1
min at medium speed. Add flour
soda, cinnamon and salt, beat 1 min. at
medium speed. Stir in raisins and nuts.
Bake 350" 50 to 60 min.
